BROCCOLI, APPLE & WALNUT SALAD
Serves 4-6 People
Ingredients:
Salad:
2 medium heads of broccoli, chopped
1 large carrot, grated
1 organic Macintosh apple, finely chopped
½ cup raw walnuts, chopped
1/3 cup dried cranberries
½ cup red onion, chopped and soaked
¼ cup raw sunflower seed
Dressing:
¾ cup canola-free mayonnaise
2 Tbsp lemon juice
1 garlic clove, minced
1 tsp unpasteurized honey
salt and pepper
Instructions:
Chop broccoli into bite sized pieces and place in a large bowl. Grate carrot, finely chop the apple and chop walnuts into smaller pieces. Chop red onion into fine pieces and soak in water for about 4-5 minutes. Drain the water off and add to the salad. Measure and add cranberries and sunflower seeds. Mix well.
In a separate bowl combine the ingredients for the dressing. Mix well, then add the dressing to the salad. Mix until all the pieces are coated well.
Let sit in fridge covered for a minimum of 1 hour before serving.
