BRUSCHETTA PASTA SALAD

Serves 2-3 people

Ingredients

2 cups spiral rice pasta (uncooked)

1 large organic (beefsteak) or 2 medium organic Roma tomatoes

1-2 green onions, chopped

1 tsp minced garlic

Small bunch of fresh basil

1 Tbsp olive oil/avocado oil

3 tsp balsamic vinegar

½ cup cheddar cheese, shredded*

*dairy free use ½ cup of vegan Parmesan  

salt and pepper to taste

Instructions:

Cut tomatoes into small cubes and mix in a bowl with the green onions, garlic, basil, olive oil, balsamic vinegar, salt, pepper and cheddar cheese.

Let this sit for about 10-15 minutes to let the flavours mix.

Boil a pot of water and cook 2 cups of pasta. Cook pasta to al dente and give it a good cold water bath when done. Let cool slightly before mixing with tomato mixture.

Then serve!

Make it a meal by adding in a protein. Grill or cook chicken, add a tin of tuna or salmon, or add in leftover beef
