Ingredients:

1 large egg
1 tsp baking soda
dash of salt
1/2 cup coconut sugar
1 tsp vanilla extract
1 cup cashew butter

1/4 cup mini chocolate chips (optional)

Instruction:

Preheat oven to 350°
Add all the ingredients in a large deep bowl, and using an electric mixer, mix until smooth.

If you are adding in chocolate chips, stir them in by hand after using the electric mixer.

Roll cookies into 1 inch balls, or use a cookie scoop, and place them 2 inches apart on a baking stone or a regular baking sheet covered with parchment paper.

Bake for 10-13 minutes. If you are using a stone, first batch will take longer than the next batch. They are done when edges tops are golden brown.
​
Let the cookies cool on the pan a few minutes before transferring them to a cooling rack.
​
Keep leftover cookies in the fridge.
