HOLY GRANOLA BARS, BATMAN!
Makes 24 bars
Ingredients:

1 1/2 cup puffed rice
1 1/2 cup puffed millet
1/2 cup ground flaxseed
1 cup gluten free flour (containing xanthan gum)
1/2 tsp cinnamon
dash of salt
1/2 cup avocado oil or softened butter
2 large eggs
1/2 cup coconut sugar
1/4 cup honey
1/2 cup apple sauce
1/4 cup small chocolate chips
Instruction:

Preheat oven to 350° F.
Mix first six dry ingredients in a big bowl. Set aside. In a smaller bowl, combine the oil/butter with the eggs, sugar, honey, and pureed fruit. Mix wet ingredients until smooth and combined. Then add wet ingredients into the bowl of dry ingredients. Mix until all the flour is completely incorporated. Add chocolate chips and mix well.

Pour mixture into a large cake pan (9x13). Use a spatula to push the batter into all the corners of the pan and evenly distribute.
Bake for 25 minutes. Give a few minutes extra if top is not browning yet.

Let bars cool before cutting. Then store in a sealed container in the fridge or freezer.
