OOEY GOOEY BANANA BREAD

Makes 1 Loaf

Ingredients:

2/3 cup of coconut sugar

1/4 cup butter/ghee, softened or avocado oil

1 egg*

3 small or 2 large ripened bananas, mashed (~350 g with skin)

1/4 cup buttermilk**, room temp

1 Tbsp of molasses

2 1/4 cup gluten free flour (with xanthan gum)

1/2 tsp baking soda (use baking powder if not using buttermilk)

1/2 tsp sea salt

1/4 tsp cinnamon

dash of nutmeg

1/3 cup of mini chocolate chips

*replace egg with 1 tsp psyllium husk powder mixed with 3 tsp of water. Add 1/4 tsp baking powder to the dry ingredients

**make dairy free buttermilk by adding 1/4 tsp of apple cider vinegar or not from concentrate lemon juice

Instruction:

Preheat oven to 350° F.

Pull out milk to warm to room temperature, add apple cider vinegar if needed to make buttermilk.

Mash bananas in a separate bowl and set aside.

Cream soft butter with coconut sugar. Then add the rest of the wet ingredients and mix until well combined.

In a separate bowl, mix flour, baking soda, salt, cinnamon and nutmeg and stir until combined.

Then add the portion of the dry ingredients to the wet, stir until well combined and keep adding dry ingredients until everything is mixed together. 

Fold in chocolate chips.

Grease a loaf pan and place mixture in. Bake for 50 minutes, or until top is golden brown and tooth pick comes out clean.

Serve and enjoy!! 

Keep stored in fridge in a sealed container. Will last about a week, if not eaten first!!
