PSYLLIUM HUSK POWDER EGG

Makes 1 egg equivalent

Ingredients:

1 tsp psyllium husk powder

1 Tbsp water

Instructions:

Add psyllium husk powder and water in with your wet ingredients. Mix well and let sit for a few minutes. As it thickens, it will be able to emulsify any fat and other liquids the way eggs do. If you mix it before adding it in, it can become so gelled that it will be hard to incorporate into your baking.

For every egg you replace, add an extra 1/4 tsp of baking powder with your dry ingredients. This helps give your batter the rise you normally get with a regular egg.
