SIMPLE ENERGY BITES

Makes ~22 balls

Ingredients:

1/2 cup nut butter (or seed butter)

1/2 cup protein powder

1/4 cup honey or maple syrup

1 tbsp chia seeds

1/2 tsp cinnamon

1 tsp vanilla extract

pinch of salt

1 1/2 cup quinoa flakes or rolled oats

1/4 cup mini chocolate chips

2-4 tbsp water

Instruction:

In your food processor, pulse nut butter, protein powder, honey, chia seeds, cinnamon, salt & vanilla together.

​

Then add your quinoa flakes and chocolate chips, mix on low until everything is evenly distributed.

​

Have a small glass of water filled with your tablespoon measurement ready. Now, turn the food processor on low and add 1 tablespoon of water at a time. When your mixture starts turning to more of a dough consistency, it has enough water.

Using a cookie scoop, or a table spoon, scoop out a heaping tablespoon of your mixture, and form into balls.

To help keep the balls from sticking to your hands, keep them slightly damp with cold water.

​

After balls have been formed, pop them into the fridge for 20 minutes to set up. Then keep them in a sealed container in the fridge or freezer.
