Gluten free living is not just about replacing breads and pastas. Many other ingredients need replacing as well, one of which is bread crumbs. I have tried using oats and psyllium husk when needing bread crumbs for things such as meatloaf and meatballs, and they will work well for that. For doing your own coating for chicken, they don’t exactly match traditional bread crumbs. For these kinds of meals, I have really enjoyed using the Thornbury Chia Bread Crumbs. One thing I love about Thornbury is that it’s a local company to where we live. These bread crumbs are made by Thornbury Bakery Café, which is nestled along the Georgian Bay; a hop skip and a jump from Collingwood, Ontario. This amazing place is a family owned company that has been running for over 100 years. They make everything from scratch and have been expanding into gluten free and keto baked goods over the past while.
Thornbury’s bread crumbs give such a wonderful taste and texture when coating chicken. They are also very useful for meatloaf and meatballs. I appreciate that the ingredients are simple and are made without any preservatives and are non-GMO, which is important to me. I really like that it’s not just a rice based product. Not that I have anything against rice, but it’s nice to get a little more variety in the grains you consume, whether gluten free or not. With the combination of adding in quinoa flour, chia to the rice, you get a rich source of many nutrients, including some protein and omegas. This makes these bread crumbs not only delicious but highly nutrient dense.
I don’t use bread crumbs as often, so in order to keep these fresh, I keep them in my freezer. This helps to protect them from becoming stale. Unlike keeping bread in the freezer, I can pull my bread crumbs out and use them right away. This is extremely convenient since I am usually thinking about these kind of meal choices last minute.
We are not able to use eggs at the moment for doing shake n’ bake style chicken, so I am so grateful that these bread crumbs stick remarkably well to the chicken if it is damp. For this, I run my drum sticks under cool water and then pop them into my container with the breading.
All in all, I have been extremely happy with this product and if you haven’t had a chance to try them, I would recommend you do!
